Description
Brittle or Brickle describes a cake that you make with a topping that is hard and crunches easily in the mouth. Sounds strange but very tasty cake recipe. The Almonds provide the substance to this cake.

Ingredients
- 1/2 c — Blanched Almonds, sliced
- 1/3 c — Sugar
- 1/2 c — Unsalted Butter
- 1/4 c — Honey
- 1 tbsp — Milk
- 1/2 c — Unsalted Butter, softened
- 2/3 c — Sugar
- 2 — Eggs
- 1 tsp — Almond Extract
- 1/3 c — Milk
- 1 3/4 c — Flour
- 1/2 tsp — Salt
- 2 tsp — Baking Powder
Instructions
- Preheat oven to 350F and grease the cake pan.
- In a saucepan add the almonds, 1/2 cup butter, 1/3 cup sugar, honey and 1 tablespoon milk.
- Cook on a medium heat until the sugar completely melts.
- Bring to a boil and boil for 5 minutes then remove from heat and set aside.
- Cream 1/2 cup butter and 2/3 cup sugar until light and fluffy.
- Add eggs, almond extract and milk. Then mix and finally add 1 cup of flour, the salt and baking powder.
- Beat until well blended.
- Stir in the remaining 3/4 cup flour.
- Spread batter in pan.
- Pour almond mixture gently over batter and spread evenly.
- Bake for approx 40 minutes or until toothpick inserted in centre comes out clean.

Careful that you choose the correct pan size. As with most cake recipes a cake that is shallower will cook quicker.

If you cook the brickle for under 5 minutes you’ll get a tasty toffee mixture. This will sink into the batter whilst baking and tastes great. I’ll send a photo through soon.
