Description
For the dedicated cake maker. Two separate stages are needed, with chilling overnight. The end result will be that the while chocolate lemon cheesecake will be devoured in a matter of minutes!

Ingredients
- CRUST INGREDIENTS
- 1 1/4 c — Almonds, finely chopped
- 3 tbsp — Butter, melted
- 3 tbsp — Granulated Sugar
- 2 tbsp — All-purpose Flour
- FILLING INGREDIENTS
- 28 oz — Cream cheese
- 1/4 c — Light Brown sugar
- 1/2 c — Granulated Sugar
- 2 tbsp — Lemon Juice, fresh
- 2 tbsp — Cointreau liqueur
- 2 tbsp — Vanilla Extract
- 1 1/2 tsp — Cinnamon
- 1 c — Sour Cream
- TOPPING INGREDIENTS
- 4 oz — White Chocolate, small pieces
- 1/4 c — Heavy cream
- 1 tbsp — Cointreau liqueur
- Whipped cream
- Almonds, sliced and toasted
- Lemon Peel, grated
Instructions
- Preheat oven to 425F.
- Combine all crust ingredients mix together well.
- Press into bottom of baking pan.
- Bake 12-15 mins until golden.
- Cool while preparing filling. Reduce oven to 350F.
- Beat cream cheese in large mixer bowl until fluffy.
- Gradually beat in sugars until light and fluffy.
- Beat in eggs, one at a time, beating well after adding each one.
- Mix in lemon juice, Cointreau, vanilla and cinnamon.
- Gently fold in sour cream. Pour over crust.
- Bake approx 70 mins or until center of cake is just set.
- Remove from oven and cool completely on wire rack.
- Refrigerate covered for several hours or overnight.
- For topping, combine white chocolate and cream in small heavy saucepan.
- Heat over low to moderate heat, stirring frequently, until chocolate is melted.
- Remove from heat and cool for 10 min.
- Stir in Cointreau or lemon extract and pour over cake
- Refrigerate until topping has set.
